New Norfolk Distillery is anchored in the Derwent Valley, in southern Tasmania. The small site is part of Willow Court, a former hospital and asylum complex that played a significant role in the region's development and history.
Since 2019, New Norfolk Distillery have made their own ferments (predominantly molasses based), and distilled, bottled and aged their spirits on site. The small team now produces a range of modern rums, gins, liqueurs and other tantalising tipples.
